✦ Raspberry & Lavender Iced Tea Recipe

Serves: 2
Prep time: 5 minutes
Brew time: 10 minutes (plus cooling)

Ingredients:

• 2 heaped teaspoons of Raspberry & Lavender loose leaf tea
• 500ml freshly boiled water
• 1–2 teaspoons honey or agave syrup (optional, to taste)
• A squeeze of fresh lemon juice (optional, but adds brightness)
• Ice cubes
• Fresh raspberries and a sprig of lavender or mint, to garnish

Method:

1. Brew the tea:
   Add the loose leaf Raspberry & Lavender tea to a teapot or infuser. Pour over 500ml of freshly boiled water and allow it to steep for 10 minutes to draw out the full flavour of the fruits and flowers.
2. Sweeten (if desired):
   If you’d like a sweeter cooler, stir in honey or agave while the tea is still warm. Adjust to taste.
3. Cool and chill:
   Let the tea come to room temperature, then transfer it to the fridge for at least 30 minutes to chill fully. For an extra burst of flavour, you can add a few fresh raspberries or lemon slices while it chills.
4. Serve:
   Fill glasses with ice cubes and pour the chilled tea over. Add a squeeze of lemon if you like a hint of citrus. Garnish with a couple of fresh raspberries and a sprig of lavender or mint for a fragrant finish.
